A 2-A:10-B:C rating covers ordinary combustibles, flammable liquids and energised electrical equipment — between them, nearly everything that starts in a kitchen. The 2.5 lb size is the largest most people can hold steady at arm’s length with one hand while the other opens a door.
Rechargeable metal valve rather than plastic, a pressure gauge you can read at a glance, and a wall bracket. Mount it between the cooker and the exit, never behind the cooker.
Fitting and care. Mount it between the cooker and the way out, so you never have to move towards a fire to reach it, and at a height a person can lift it from without a step. Check the gauge monthly and record it on the tag; a needle out of the green means it goes for service or replacement, not back on the bracket. Invert and shake the cylinder twice a year to stop the powder compacting at the bottom. After any discharge, however brief, it must be recharged — a partially used extinguisher will not hold pressure and cannot be relied on.
